One of my students asked this question during the Piclit Movie project. Actually, many of my students wondered why they were limited to using Piclits.com. This was a fair question.
I wanted students to be as creative as possible with the perceived limitations. I wanted the students to learn how to create in groups. And I wanted the students to learn how to share their work using the html code. Most of the students were very sucessful. I was concerned that students would be overwhelmed by Photoshop. I am often overwhelmed by it.
But now it is time to learn how to be overwhelmed.

Later, use these sites for reference. We have CS3.
Julieanne Kost, the Digital Imaging Evangelist at Adobe, is an excellent resource for Photoshop. She has an Adobe Blog too.
Russell Brown, the Senior Art Director, might overwhelm people with his ethusiasm. If his energy does not impress people, his knowledge most certainly will. Watch Russell Brown TV or read his blog.
You can also try Photoshop Tutorials. There are also sites on YouTube and many other locations.
